We have had a busy, but very fun weekend! Friday, one of my good friends Elizabeth came to visit. She ended up getting this weekend off work so decided to make a trip to Arkansas! I was so glad to spend some time with her...it was much needed! Friday night we stayed in and cooked dinner. We also made one of our favorite desserts (I will post the recipe at the end) 4-layer chocolate dessert! Needless to say, it didn't last too long! We also made yummy smoothies and of course ended the night with our favorite show...Keeping up with the Kardashians.
On Saturday morning, Elizabeth and I went on a nice run and came back to Mitch making us sour cream pancakes and bacon...delicious! We spend the afternoon shopping and of course we couldn't pass up a trip to Kennedy, a local coffee shop here in Bentonville. That evening, two more of our good friends, Peter and Scott, also came to visit. That night we went to Fayetteville and ate at a restaurant on Dickson Street. It was so nice to hang out with them and catch up with each other!
Sunday was spend doing the usual...church then golf. Elizabeth had to leave that morning, but Peter and Scott we able to join us for a round of golf! We made it to hole 15 and then the remaining holes were so backed up, we just decided to leave.
Mitch and I are going through a class called Financial Peace at our church. We are going on week 5 of this challenging program and we love it! Before we started the class, we both have been raised to be smart with our money and we have taken finance courses at school so overall, we thought we had a good budget and knew what we were doing....well we were wrong ha. This class takes a Christian perspective to how you handle your money and will not only be a great starting point for us, but a guide to manage our money for years to come. At the end of this class we are are hoping to be successful in understanding this new and challenging idea of money. We would recommend this class to anyone, it will make you think of your money and how you handle in a way you have never thought about it before!
Later that evening, we went over to some friends house for a going away party for Will and Michelle. They grilled out hamburgers and hot dogs and had homemade ice cream! It was delicious!
For dinner tonight we are making homemade chicken parm pizza, a recipe out of a cookbook given to my by one of my roommates Shannon! It was one of our first meals we made and we love it! Here are the recipes....hope you enjoy!
Chicken Parm Pizza
1 Pizza dough
1 lb of ground/sliced chicken
3 garlic cloves, chopped
1 small onion, chopped
Salt
Black pepper
Pinch of parsley, red pepper flakes and dried oregano
1 8oz can tomato sauce
1 cup parm cheese
1 1/2 cup mozzarella cheese
Preheat oven 425
Heat deep skillet over medium/high heat with olive oil
Brown chicken then add garlic, onion, salt, and pepper (cook together for 6 min)
Then add parsley, red pepper flakes, oregano, and tomato sauce (heat sauce through)
Apply meat sauce to pizza dough, then arrange cheeses on top of pizza.
Bake 10-12 minutes.
4-layer Chocolate Pudding Dessert
Make own crust or buy store bought pie crust dough.
Layer 1: Press crust on bottom of 9x13 pan-bake 10-12 min @350 *allow crust to cool before applying layer 2.
Layer 2: Combine 8oz cream cheese, 1c powder sugar, and 9oz of cool whip. *Apply on top of crust.
Layer 3: 2 small pkgs or instant chocolate pudding-follow instant pudding directions. *Apply on top of layer 2.
Layer 4: Cover the top with cool whip (and chocolate sprinkles if desired)!
