Rain rain go away...

I hope y'all are staying dry!! I can't believe this rain... it is about to drive me crazy :) It has been storming here for the past 5 days and today all of nwa was flooded! I have never seen anything like it. Here is a link to the news station.. it has some crazy stories if you haven't read about it... News 5.

I hope y'all had a wonderful Easter weekend! We enjoyed spending some much needed time with Will and Michelle.
Friday night, Mitch was at work and I was home trying to clean the house a little and it kept getting darker outside... all day it looked raining and nasty outside, so I didn't think much of it. But for some reason I got the urge to watch the 6:00 news and so I turned it on and they were talking about all this severe weather headed our way. Most of you know I am sooo afraid of storms and I was very fortunate my sister-in-law was in town. So I called her and asked if she had heard anything... and after a couple calls back and forth and I lost power, we decided it would be best if headed to her parents house because they have a basement. I drove over there in the storm with the sirens going off... I was so scared! I finally made it and I am so glad I did because it was the area where my house is that got hit the worse and very close to the tornado that touched down.. I couldn't imagine being there by myself.
Because of all the severe weather, Mitch got stuck at work for about 30 minutes, but finally made it over to pick me up and then we went out for dinner.

Saturday, Mitch had to work and I slept in! Once again, it stormed all night and morning and so it was nice to sleep in and not worry about getting out in the nasty weather. That afternoon, Michelle and I went out to lunch and shopping. We always seem to get in trouble when we go shopping together :) I have fallen in love with scentsy and I love how much it smells up every room... So guess what I bought.. yep another scentsy!



I have one in our hallway to our office, our living room and now in our bedroom! It was so cute and matches our room perfect... and not to mention smells so goood!
Saturday night, we were all suppose to go to the Naturals Baseball game, but yep, you guessed it... it was storming. Instead we all hung out at our house and went and got yogurt!

Sunday was an early morning! Our Easter service at church started at 8:30, but it was so good! I always love the Easter service :) After church, we went over to the Faber's for lunch! It was so good and we ate so much yummy food! 



That afternoon we had to say bye to Will and Michelle, which I didn't like.. I am thinking a Dallas trip is in our very near future!
We got back home around 2:00 since it was still storming and couldn't go do anything outside, what better to do that take a nice Sunday nap! It was the perfect day for it! For the rest of the day, we just hung around the house and watched movies. It was so nice to just take a day and relax since we have been so busy lately.

Mitch was off today and I had a busy day at work! It was storming all day and one of the girls I work with couldn't make it back to work after lunch because all the roads were starting to flood. So all afternoon I was watching the weather and kept getting updates on how bad the flooding was. There was one point where the road I take to get home was closed and so the doctors I worked for were going to let me stay at their house for the night. And although I really appreciated it.. I just wanted to be home and I didn't have anything for work the next day. So about 4:15 we closed our office because the whole town of Fayetteville was closed and no patients were coming in. So I decided to try and make it home and if I couldn't make it, I was going to turn around and go stay with them. Well I made it, but I left at 4:15 and didn't make it home until about 5:45! It was so crazy out and we were at a standstill on 540 the majority of the drive home.

Tonight we went to bww.. thanks to Will and Michelle and enjoyed a delicious dinner, but dessert was the best part! Mitch got a free chocolate cake and ice cream for his birthday!



Tonight we are just hanging out waiting on the Thunder game to start!! I think it is actually suppose to stop raining tomorrow, but then start back up tomorrow night :( I am so ready for the warm sunny weather to be back so we can get back out on the golf course!
Mitch is off again tomorrow and I have a short week at work. I am only working until Wednesday and then we are headed to Dallas for our conference. I am not looking forward to another weekend away from Mitch, but I am looking forward to going to a place that is warm, sunny and not storming!

This past week...

Happy Friday! I hope y'all have had a wonderful week! Mitch and I have had a pretty relaxing week, so here's a little update on our lives...

Last weekend, we headed to Tulsa. We went on Friday and it was so good to see my family. That night we went to Hideaway Pizza with my parents and then went and got ice cream! Saturday, my whole family went out for lunch and we went to one of our favorite Mexican restaurants. It is a little hole in the wall, but so good. We hardly ever pass up a trip there when we are in Tulsa. After lunch, Mitch headed to play golf wth Peter and I spent the day shopping with my mom! It was the perfect day and I would have loved to be out there on the golf course, but I would never pass up a day shopping with my mom! That night we headed back to Bentonville. It was a short trip, but Mitch was on call and we had to be here if he was to get called in.. which he didnt, so we got a lot done on Sunday! We cleaned the house, went to Wal-Mart and went golfing! It was the perfect day for it and we both enjoyed it! Later that evening, Mitch mowed the lawn and I went running. I haven't been able to run very far because of my back, and now I am good to go! So it was nice to get out and run!

That night for dinner, we made chicken tacos. I posted the recipe a few weeks ago when we first made them, and we liked them so much, we just had to make them again. We also made a new cake.... My dad found this recipe in a magazine and wanted my mom to make it, so I got the recipe from her because it sounded so good.


It is called Tres Leche Cake  and if you have never had it.. it is so good! Definitely not good for you ha, but delicious! It is almost like a custard, its a very moist cake! The link I posted isn't the exact recipe we used, but pretty close. We also toasted some coconut and put it on top.... yum!



After dinner, we decided to go on a walk and play frisbee, which was a lot of fun. I am loving that it is staring to stay light into the evening. Mitch and I love to be doing stuff outside, so now when we get home from work, we can still be outside.

Monday we both worked, and we made a casserole for dinner. I love making casserole dishes and this one was a new crispy chicken casserole. It turned out really good and we made half and froze half, so on a night we need a quick meal we can just stick it in the oven.

Nothing too exciting happened this week, we just worked a lot and Mitch was able to finalize everything his new job! Wednesday afternoon, Mitch came up to my office with me and we are in the middle of remodeling our whole office....its a mess! We just got all of our new furniture and so Mitch came and helped one of the doctors put it all together, because I wasn't going to be much help with that :) He stayed all afternoon, and it was nice to have him up at the office all day. I am going to be so glad when this remodel is done.. it has been crazy at work!

Today, Mitch is working and I usually don't work Friday's but we have been having a lot of events on Friday's, so I have been doing that all day, which is fun! Tonight we are going to Jose's for some mexican food and then hanging out with Will and Michelle... which I am sure will include ice cream :)

Work update and new favorite snack!

Happy Friday! I hope y'all had a wonderful week. We have had a pretty uneventful week here in Bentonville... nothing too exciting to share with y'all.

I had another busy week at work... I had 4 events and for the most part, they all ran smooth. I was thinking the other day, I am going on my 3rd month of work. I feel like I have been working here forever ha! I have been so blessed with this job and work with some of the most amazing people. There is another girl that is my age that works there, Morgan, and we have become good friends... so that's been really nice! At the end of this month we are going to another marketing conference, and this one is in Dallas. Morgan is getting to go with us to this one and I am so excited she will be joining me this time :)

Mitch has been working a lot as well. He has had a pretty nice schedule for the past month or so. As much as I miss getting to spend his days off with him, I think he is enjoying them :) He plays golf on every one of his days off! The weather has been perfect here the past month and he is taking advantage of that... as I would too if I were him!
We have some exciting news about Mitch's job.... As most of you know, he has been working hard to get into the ICU and he has to have so much experience, go through so many classes and take so many tests even to be considered for an interview. At first I was like man, they make it impossible to get in to the ICU, but the more I think about it,  if I were in the ICU, I wouldn't want just anyone in there working on me. So I guess it's a good thing... But, he got called in for an interview last Tuesday and then found out he got the job!! We are so excited and I know this is where Mitch wants to be and I am happy for him! The only downfall is that it is a night shift position, so we are both going to have to get use to that. It will def be a big adjustment, especially since when I am driving home from work, Mitch will be driving to work.... and when he gets off, I will be driving into work. So basically we will just be passing each other on 540. As soon as the floor he is on right now gets enough staff to let Mitch leave, he will move to the ICU floor... they told him it could be 1 week or 1 month. So right now we are just waiting...

On a different note... I have a new favorite snack to share with y'all! You might think it's weird at first.. it's okay, I did too. But give it a shot... you will like it!
So most of you know, the doctors I work for are crazy strict on what they eat. Everything is so healthy and has to be organic! So over the past couple months I have been introduced to all this new stuff to eat and I am actually liking it! We are right next to Ozark Natural Foods, so we walk down there and get snacks, lunch drinks all the time! For those of you who don't know.. ONF is like a Whole Foods and I lived at Whole Foods when I lived in Tulsa..
Mandy, one of the doctors loves to cook and so she brings snacks up to the office all the time and thats how I have learned about all these new healthy snacks to make! She also has a blog that I have become obsessed with! Some of the stuff is a little out there for Mitch and I, but the majority of it we really like!
So the first thing I am going to share with y'all is the snack balls. She has all different kinds, but we chose to make the keylime, chocolate and we bought stuff to make the carrot cake ones, but haven't made them yet. There are so easy to make and we bought most of our ingredients from ONF, so its all organic, but you don't have to.


The Key Lime ones are my favorite!! You will need:
Food processor
1 cup cashews
1/2 cup raisins
pinch of salt
Juice of 1 lemon
Zest of one lime
Coconut flakes
Process cashews until ground. 


Add the raisins in and process again. Add remaining ingredients and process until it all sticks together...


Form into balls and roll them in coconut flakes.... Keep them in the fridge or freezer.



Those are the key lime, next we made the chocolate. I am not a chocolate fan, but I thought Mitch would like them...
1 1/2 cup walnuts
3/4 cup raisins
1 Tbsp honey
1 1/2 Tbsp cacao powder (just reg. cocoa powder works great)
coconut flakes


Process the walnuts in the food processor until finely chopped. Add raisins and process again...


Add remaining ingredients and process until it all sticks together. Rollin coconut flakes and keep then in the fridge!

The chocolate ones I wasn't a big fan of, and Mitch thought they were pretty good, but we both liked the key lime the best!! We had the carrot cakes ones at work yesterday, so I will prob wait awhile before I make them at home, but they are delicious too! I know they are a little strange, but they are so so easy and a great healthy snack and having 1-2 at a time will fill you up! So try them and let me know what you think. We will be making them a lot more around here :)
Here is the recipe for the carrot cake ones...
1/2 c walnuts
1/2 c almonds
4 dates, pitted
1/4 c raisins
1/4 c coconut flakes
1 large carrot
1 1/2 Tbsp coconut oil
Dash of cinnamon 
*Process nuts until finely shopped. Add raisins and dates and process again. Add remaining ingredients and process until everything sticks together. Roll into balls and roll in coconut flakes. Yum!

Weekend

I hope y'all have enjoyed your weekend! The weather has been absolutely beautiful here and it is putting me in the mood for summer time! I worked so much this past week and wasn't very excited about this weekend because Mitch had to work Friday-Sunday, but it turned out to be pretty good!

This past work week was crazy! I have never worked so much in my life! I just keep thinking, if I didn't love my job, I would be miserable. I had 4 events this week and they all went really well, but it was a super stressful time. I worked over 50 hours trying to make sure everything got done, so I was so ready when Friday came! I enjoyed my weekend, but am ready to get back to work now :)

This weekend Mitch's grandparents and Will and Michelle came in town. Friday night, Mitch and I went over to his grandparents house to visit with them a little and had dinner. Saturday, Mitch worked and I got up and went shopping! I think my body is finally adjusting to getting up at 5 every morning, because now I can't sleep in at all! Saturday morning I was up by 6:30 :( But I was able to just lay in bed and catch up on all my shows from the past week I missed.. so that was nice! Later that morning I went shopping. I had some birthday money to use and I found some good deals! Here are two new dresses I got...



I just love buying dresses! I also got new jean shorts, some new tops and jewelry. It was a successful shopping trip!
Later that afternoon, Michelle came over we just hung out! It was so nice to just relax and hang out together. It made me miss her living just right down the street when we use to do that all the time! She also got me a new Arkansas Scentsy for my birthday and I just love it! It smells up my whole house!


She also brought me my new luggage! Will has a friend that sells luggage and Mitch and I needed some new ones so bad! So we ordered it though him and Will and Michelle brought them to us this weekend!


They are hot pink and a 5 piece set...so we have every size! I have been so excited to get them and since I have three trips coming up they will be very useful!

That night we all went to Marketplace for dinner and Mitch was able to meet us there! Sunday, Will had a bike race down by Fayetteville, so I tagged along with Michelle to cheer on Will. It was a lot of fun and I got so burned!!!! I was outside for about 3 hours and I got fried. I usually burn pretty bad at least once at the beginning of the summer, but this one is bad! My face, arms and legs are bright red! We had to make a little trip to walmart tonight after dinner. Instead of aloe vera, we got this coco butter cream that is suppose to be really good on sunburns and this is me about to lather it all over!


So that sums up our weekend.. nothing to exciting! I have another busy week at work, and Mitch is off these next couple of days. Tomorrow he has two basketball games so thats how we will be spending our evening :)

5k race and hiking trip

Hi! I hope y'all are enjoying your Sunday and this beautiful weather! I can't believe it was in the 80's today! Mitch and I have had a pretty fun weekend. We were both off all weekend and so we took advantage of this beautiful weather! 

Friday, Mitch had to work, and since I took off Thursday to go to Tulsa, I had to go in for a few hours on Friday. Our office is in the middle of remodeling and so all the construction workers and interior designers were there.. needless to say I didn't get a lot done :) I left at 1 and came home and took a nap. I have been so tired lately. I don't think I ever caught up on my sleep from Denver and I have been working late because of my events. After my nap, I decided to go shopping. I had some birthday money, and I found a really cute dress at target! I also went to walmart and got stuff to make dinner.

Saturday, Mitch and I had to get up early for our race. It was just a 5k so we really didn't prepare much, but it was a lot of fun. I love the atmosphere of races... especially with the weather finally starting to warm up! They had stuff all along the square and there were so many people! I wish I could have ran the half, but with my back I am still suppose to take it easy for a few more weeks! 



My friend Jenna, was suppose to run with me, but she hurt her back and couldn't run, so Mitch took her spot! I love running races with Mitch, but I always end up running by myself because he is so fast :) He placed 2nd, which was awesome! 


After our race, we went out and had breakfast and then decided to go hiking. We were planning on going hiking on Sunday after church, but my mom ended up coming up for lunch on Sunday, so we went around 11 Saturday morning and stayed out all day! It was the perfect day and there were so many people out! We had never been to this trail before, so we didn't really know what to expect. It was a very rocky, skinny trail but we ended up really liking it. It took us to a look out spot over beaver lake that was so pretty! Here are some pictures form our hike...

We literally spent all day out there and when we got home, we got ready and went over to Jenna and Byran's house for a cookout and games night! Everyone brought their own meat to grill out and then they provided all the sides. It was a really fun idea and I always love when we all get together. After dinner, they started playing games, but I was just so tired from being up early for the race and hiking all day we left. We came home and watched some tv and I was asleep by 9:30 on a Saturday night... lame I know :)

Today we went to church and met my mom and grandparents at our favorite restaurant, MarketPlace! It was nice to see them and have a good lunch! My mom also brought me my new iPad! I was so excited to get it! After lunch, we went to another trail and went walking. This one wasn't quite as intense as the hike on Saturday. We went to Compton Gardens, a trail right by our house. It is so pretty and is one of my favorite places to run!


With the weather in the 80's today, we just wanted to be outside all day! We walked all the way up to Crystal Bridges and then back home. When we got back, we went and just laid out on our back porch. One of my all time favorite things to do it lay out! I love hot weather and I would almost go as far as saying I might be a little addicted to it. I would lay out day everyday if I could! There is just something about the warm sun hitting your body... I love it! The rest of the day we spend messing with the ipad and watching golf... and I was so excited Phil won! He is my all time favorite golfer and I am cheering him on for another win at the Masters! 

Tonight, we went over to Mitch's parents house for dinner. They grilled out steaks and they were delicious! We also celebrated my birthday with them, and now I am going to have to go do some shopping.. I am not going to complain :)

We are now back at home relaxing and Mitch is trying to set up the iPad for us. I have been so busy at work lately and this week is only going to be busier. We have events every night but Thursday and one all day on Friday! I love what I do, so I am really looking forward to it... but I am trying to prepare myself for a long tiring week. Mitch doesn't work much at all this week, but works next Friday, Saturday and Sunday. Looks like I will be watching the Masters all weekend by myself. I hate when we works all weekend. But I am looking forward to seeing Will and Michelle this weekend!
