Happy Saturday! I hope all of you are out enjoying this beautiful weather!! We have had a busy, but fun week, so here is a little update on our life!
This was my third week of work, and I am finally getting settled in and beginning to understand everything. I am loving it more everyday and so glad that I enjoy going to work everyday!
Monday, I got home at 5:30 and Mitch didn't get home until 7:45, so I had plenty of time to rest and make dinner. I like having that couple hours before he gets home, so I am not rushed to get dinner made. I made lobster bisque soup. It had always been my favorite soup and so I thought I would try and make it. It is so hard to find a good bowl of lobster bisque at restaurants, so I wasn't expecting it to turn out that good. I was very surprised when Mitch got home and we tried it, it was soooo good! I am hooked on it and it is such an easy recipe. Here is the link to the recipe Lobster Bisque. You can also add some veggies and I used heavy cream instead of milk... I highly recommend that!
Tuesday Mitch had to be up at the hospital to take some tests, so he came and took me out to lunch. We found a new restaurant that we love in fayetteville. Most of you know, we could live off mexican food, and so of course the first place we tried was mexican and we loved it. It is right by my office and we go there at least once a week!
That night, I went with one of my friends, Jenna, to a get-together our Sunday school class was having for all the girls. There is a girl that just had a baby, so it was kind of a "meet the baby" party. There was lots of yummy food, and it was nice to spend some time getting to know more girls!
Also that night, Mitch surprised me with king cake! Since he lived in New Orleans for a little bit, he use to have it a lot and loves it, so he bought a big one from Rick's Bakery and surprised me with it!! It is so good and if you have never had one, next Mardi Gras, it's a must!
On Thursday, Mitch had his first adjustment! He came in right before I got off and when he was done we went to On The Border for dinner! Once again.. we had mexican :)
Friday, I only had to work for two hours and so I went in from 10-12. It is nice I don't have to work much on Fridays, but I do like getting out and it gives me something to do for a little bit. When I got done, I had lots of errands to run and I also got my ring cleaned!! Our jeweler is right on the square and it is so nice to just be able to drop it off to get cleaned and polished! I love having a clean, shiny ring!!
Mitch worked Friday, but that night when he got home, we went over to Jenna and Bryan's house for pizza! We usually play games, but we ended up just hanging out and talking! We have been doing this the past few weekends and it s so nice to end the work week with some good friends!
Today was so beautiful outside... It was 72 and sunny all day!! This morning, I taught my last tennis class and this afternoon, Jenna, Sam and I went running on the trail! It is going to be nice to have other girls to run with and especially with this weather.. I just love being outside!
This evening, I went to Wal-Mart and have been cleaning the house.
For dinner, I am made garlic and balsamic chicken... I am pretty sure I posted it on here awhile ago, and if you haven't tried it, you should! I am sorry I don't have more recipes to post, I have been lazy in posting them. But I do have a couple new things I have found to really like, so I thought I would share them. The first is Greek Yogurt...
I really like the Chobani brand, but this one is a lot cheaper and it really good! It makes for a perfect snack at work! The next is...
I love this! I am not a milk drinker, but this is really good! I have only had the almond flavor, which is really sweet, but next time I am going to try the original.
Mitch was on call today and unfortunately got called in. He worked yesterday, today and works again tomorrow! I won't get to spend much time with him this week, but we are going to Tulsa next Friday to celebrate my birthday with my family!!!
I have a busy busy week at work, but it should be a lot of fun. We are leaving for Denver in less than two weeks and we are trying to get prepared for it. Also, there is this new gym in the same shopping center as my office, and the doctors are buying all of us gym memberships!! It opens April 1st and is going to be so nice! It am really excited, not only because I get a free membership, but this way Mitch and I can start carpooling to work on the days we both work. We both have to be there at 6:30, but I get off at 5:30 and he gets off at 7, so this gym will give me something to do while I wait for him to get off and it will make me do my workout! Ha!
So that's a little update on us.... We have both been so busy, but it has been a great week!
Have a wonderful Sunday and a great week!

Our Weekend
I hope y'all have enjoyed your weekend! We had a wonderful time with family and friends this weekend!
On Friday, I only had to work for 3 hours and I went in at 9, so I was off by 12! It was so nice. I was exhausted from getting up at 5am all week, so I ran some errands and went home and relaxed until Mitch got home. When he got back from work, we went over to Jenna and Byran's house for pizza and games! After a long week of work, it was nice to hang out with some friends!
Will and Michelle were able to come into town this weekend, so on Saturday we went and had lunch at Marketplace! It is Mitch and I's favorite place and Will and Michelle love it as well, and since they do not get to go much anymore, we all really enjoyed it!
It was so nice getting to spend some time with Michelle! I miss her living right down the road and our very frequent shopping trips :) When we eat at Marketplace, I usually have about 3 or 4 different things I always get, but I thought I would try something new. I got the Raspberry Chicken and it was sooo good. It is my new favorite thing to get there! And yes, we got a chocolate mess for dessert!
Since we always do the "two can dine" meal, we get an mini appetizer and mini dessert. which they really aren't mini at all! So this is the mini mess, and it is the perfect size for two people!
After lunch, the boys went to Best Buy and dropped Michelle and I off to shop! We always love shopping together, but seem to get into a little trouble. We LOVE to shop :) Michelle got some cute home decor and I found some shirts for work. I can't seem to have enough work clothes!
The boys we tired of waiting on us, so we left and went to Sams. We spent over an hour in Sam's and between all four of us trying to get stuff, it was a little crazy! We love their fruit and Mitch and I go though it so fast! So we stocked up and now I can take some to work!
That night we went over to Mitch's parents to celebreate Michelle's mom's birthday. Since Will and Michelle do not get to come home often, they got all their friends together for dinner, so they could see them all.
Today had been a pretty relaxing day. We went to church and Sunday School then we enjoyed a wonderful lunch at Pinnacle! Mitch and I came home and have been relaxing all day. We both have to work tomorrow, and have had a busy weekend, so we didn't want to do anything but stay in and do nothing!
Last week, Mitch got to come into the office and have is patient exam, and I said I was going to do a post about it. I did mine last week and have started my weekly or should I say daily adjustments! After going through my new patient exam and getting all my x-rays done, I could tell there was something wrong, just by the way they were acting. When the doctors finally talked to me, they told me I have scoliosis. They showed me my x-rays and my spine was so curved! I have about at 20 degree curve in my lower spine and you aren't suppose to have any. They told me at about 18 degrees most doctors want you in a back brace and at 35-40 degrees they start looking into spine surgery. Well fortunately for me they believe in natural care and so I will not be in a back brace. They base how many times you come in on how bad your back is. There are four stages in the correcting a curved spine: intense, moderate, low, and lifestyle.
Intense is the worse and you have to get adjusted 3-4 times a week and decreasing until you get to lifestyle, which is when you are corrected, but you get adjusted every once and a while to maintain a good and healthy spine. They relate that phase to getting your teeth cleaned every 6 months, so they can stay healthy.
So I am in the intense phase right now, getting adjusted 4 times a week. While you are in the intense phase, they told me expect to be sore since they are trying to move and correct me and my body wants to keep going back to what it was like. And let me tell you, I have already experienced that! Getting adjusted does not hurt at all, it actually feels very good, but afterwards I felt like my whole body had the aches! It is crazy! They expect me to be in this phase for about 5 weeks, and during it, I can hardly do any activity. They said golf, light tennis and walking was fine, but if I was to run not to go far or overdue it. This was not good news with the races I have coming up. So I guess the races I have within the next couple months I will only be able to do the 5k's. I am kind of bummed, but I have done a lot of races in the past and their will always be races in the future, and maybe I will be in less pain when I train for them now. I am trying to be positive about it the situation, but it can be hard. I am very thankful that I got this job and receive free care, because if not we would be paying around $3,500 to fix my back. So I guess I am in the right place! Mitch had his exam, and gets his first adjustment tuesday! I am excited he will be coming into the office more frequently!
So thats a little update on our weekend! I am not ready for another week of getting up at 5am, but it does help I love my job! I also booked my first event last week, so I am pretty excited about that!
I hope y'all had a fun and relaxing weekend, and have a magnificent Monday!

First week of work!
Happy March!! I still can not believe it is already March! I am so happy for the warmer weather that it is going to bring! I have loved these 60 and 70 degree temperatures lately! Well I have almost survived my first week of work, but more on that later! I will first give you a little update on our lives lately.. I feel that we have been going and going and just so busy lately!
I am going to apologize ahead of time.. I have no pictures. I have been so bad at remembering to charge my camera! But anyways, Last Saturday when Mitch got off work, we went out to dinner and celebrated that we have been married for 8 months!! On one hand I can't believe how fast it has gone, but also, it seems like it has always been like this. It has been the best 8 months and I can't wait for many more!
Sunday, we went to church and sunday school. Mitch and I are really enjoying our bible study and are meeting a lot of people through it! After church we went out to fly a kite. This was not a normal kite and I really just went to see what it was all about.
One of our friends Bryan, just bought this kite. I really don't know how to explain it, but it is huge and it can actually lift you off the ground... kind of weird. But Mitch was excited to fly it and so we went out for about an hour and it was so windy, we spent probably 90% of the time untangling it.
For dinner, we had the Buettemeyers and the Waggoners over! We made chicken spaghetti and for dessert I made Mitch's favorite chocolate cake! It is my mom's recipe and I am pretty sure I have posted it before. After dinner, we watched the Oscars and played a game! It was a lot of fun!
Now more onto my first week of work... well I guess my first full week. Last week I got to work from home and it was so nice! That is one of the benefits about working for a family practice, they will take vacations and I can do the same or I can work form home and get paid.
My week has been busy, but so fun! I never thought I would ever like a job as much as I do. I actually look forward to going to work everyday! It has long hours and yes there are lots of times where I am so exhausted all I do is come home and go to bed! But I could not ask for a better work environment. I knew God had a place for me and he had been preparing them and me for it, but I really had no idea He was planning this. Yesterday, I brought my lunch and stayed in the office. One of the doctors came in and had lunch with me and we talked about our faith the whole time. It was so nice to know that is something that is very important to the people I work for. We also have a bible study in the morning before we open. We read scripture and pray with them, and it is just such a blessing to be around these people all day. It changes the whole atmosphere of the office and I could tell from my first interview there was something different that I liked about the office.
I have been super busy this week and I can't wait until I am finally settled! I am still trying to get into the routine of working everyday. Even though I am enjoying it, it is going to take some time to get use to. I have to be at work at 6:30, but I get Fridays off!! So it is defiantly worth it!
Mitch is still working on the med-surg floor, and has been wanting to get into the ICU. He finally got approved and is having to take some classes and tests before he can move floors. So he is working on that and should be an ICU nurse within the next month or so! It is always what he has wanted to do, so he is really excited!
Mitch is off tomorrow, but he is going to come take me to lunch! Also, we get all free care since I work there and Mitch has been wanting to go to a chiropractor for a while now. Because he is so tall everything is low for him at work and he is constantly bending over, so he has been having bad back pain. So he is going in for his consultation tomorrow afternoon!
I had mine yesterday. They make me go through it all, so that when I talk with patients, I can tell them first hand what it's all about. After the initial consultation and adjustment, I can then choose if I want to continue getting adjusted. I had a very interesting/shocking experience, and once Mitch gets his I will do a post and tell y'all about it!
I hope y'all are having a great week and enjoy your weekend!! Will and Michelle are coming home this weekend, so I am sooooo excited to spend some time with them!!!
