Here are all the presents under the tree...
I was also able to have lunch with Mitch on Tuesday! Since it is about 25 minutes away and he can't ever leave the hospital it's hard. And we never know when he's going to be able to take his lunch break, so I wouldn't want to drive all that way and then have to wait a couple hours for him to eat. But Tuesday worked out great! We actually hadn't been to the store in a while, since we have been gone a lot lately, and he didn't have anything to take, so I told him I would just bring him something. I went to Dink's BBQ and got us both bbq sandwiches. I knew there was a possibility he would be really busy and I was just going to have to drop his off and leave, but it worked out where we got to eat together. So it was nice to see him and see where he works.
Mitch was off Wednesday, and he's off 5 days! We went and had lunch at On The Border, ran some errands, and worked out. That night we went to Firehouse Subs for dinner, and neither one of us had ever been there. It was really good!
Thursday was a lazy day for us. We spent the morning watching movies and relaxing by the fire. It was so nice not to have anything to get done. For Christmas presents for all our grandparents, we are making picture calendars. So I had to make four of them, and I finished those up yesterday! They are going to be really cute, I can't wait to get them in.
For dinner, we made steak with sour cream sauce. It is really easy and so good! My mom use to make it all the time when I was little.
We also made a jello salad. My mom makes this same jello salad every Thanksgiving, and Mitch loved it, so he got her recipe and wanted to make to have around the house. It is now "his" dish that he is going to bring to family gatherings.
I will post the recipe later. We had to have an early dinner, because I had a hair appt. I love the feeling right after I get my hair done, but I hate the process! It takes me about 3 hours! So I was there from 6:30-9:30 last night... it takes up our whole evening. When I got home, we caught up on all of our shows.
The past couple of days, we have been starting to research schools for Mitch. He won't start applying until next August, but we are just starting to look and make sure there are no pre-requisites. And good thing we did, because we found out that some of the schools require you to take the GRE. There are probably half that require it and half that don't. So now we are deciding what he should do. It is such a big test and huge time commitment, but also, it might be safer for him to go ahead so if he does decide to go to a school that requires it, that won't set him back. We also discovered that some of the schools start in August and some start in January. It feels like us leaving Bentonville and going to school is so far away, but when we really started looking at it, its a lot closer than we think. It's crazy to think that we should be close to knowing where we are going by this time next year, and start thinking about moving that following spring. We also decided that since we are young, and don't have kids, we want to go somewhere fun. It's only a 2-3 year program and we probably wouldn't be able to go away somewhere far any other time in our life. It is a stressful process, trying to figure everything out, but it makes me so excited!
Oh and Mitch and I have been keeping up with Bentonville High School Football this season and it has been a lot of fun. High School football is pretty big here. Well they made it to the State Championship and the game is tonight in Little Rock against Fayetteville. We wanted to go, but a 3 1/2 hour drive wasn't quite worth it for us. We will stick to going to the home games :) But anyways we went to the game this season when Bentonville played Fayetteville and it went into overtime... it was such a good game! We are rooting for Bentonville tonight!! Go Tigers!
RECIPES...
Steak with Sour Cream/Mushroom Gravy
1lb round or minute steak
*Cut steak into small serving sizes. Salt and pepper to taste. Roll in flour. Melt 1/2 cup crisco in frying pan. Add 1/2 cup chopped onion with meat. Cook over medium heat until done on both sides. Do not over cook or cook too fast. Drain crisco out of pan. Add one can cream of mushroom soup. Cover and cook on very low heat for 30-45 min. Add one cup sour cream to meat/soup mixture and stir until well blended. Serve over white rice.
Buttermilk Jello Salad
3oz box strawberry jello
15 1/2oz can crushed pineapple
1 cup buttermilk
8oz cool whip
*Boil pineapple (don't drain). Add jello, mix together, and let cool completely (do not put in refrigerator to cool). When cool, add buttermilk, mix well, and refrigerate. When it starts to thicken, add cool whip, mix until all is well blended and put back in refrigerator overnight.
I have been wanting to post picture of our house all lit up at night, but I keep forgetting to take pictures. So I will take some tonight and post them next time! I hope everyone has a great weekend!
