Work update and new favorite snack!

Happy Friday! I hope y'all had a wonderful week. We have had a pretty uneventful week here in Bentonville... nothing too exciting to share with y'all.

I had another busy week at work... I had 4 events and for the most part, they all ran smooth. I was thinking the other day, I am going on my 3rd month of work. I feel like I have been working here forever ha! I have been so blessed with this job and work with some of the most amazing people. There is another girl that is my age that works there, Morgan, and we have become good friends... so that's been really nice! At the end of this month we are going to another marketing conference, and this one is in Dallas. Morgan is getting to go with us to this one and I am so excited she will be joining me this time :)

Mitch has been working a lot as well. He has had a pretty nice schedule for the past month or so. As much as I miss getting to spend his days off with him, I think he is enjoying them :) He plays golf on every one of his days off! The weather has been perfect here the past month and he is taking advantage of that... as I would too if I were him!
We have some exciting news about Mitch's job.... As most of you know, he has been working hard to get into the ICU and he has to have so much experience, go through so many classes and take so many tests even to be considered for an interview. At first I was like man, they make it impossible to get in to the ICU, but the more I think about it,  if I were in the ICU, I wouldn't want just anyone in there working on me. So I guess it's a good thing... But, he got called in for an interview last Tuesday and then found out he got the job!! We are so excited and I know this is where Mitch wants to be and I am happy for him! The only downfall is that it is a night shift position, so we are both going to have to get use to that. It will def be a big adjustment, especially since when I am driving home from work, Mitch will be driving to work.... and when he gets off, I will be driving into work. So basically we will just be passing each other on 540. As soon as the floor he is on right now gets enough staff to let Mitch leave, he will move to the ICU floor... they told him it could be 1 week or 1 month. So right now we are just waiting...

On a different note... I have a new favorite snack to share with y'all! You might think it's weird at first.. it's okay, I did too. But give it a shot... you will like it!
So most of you know, the doctors I work for are crazy strict on what they eat. Everything is so healthy and has to be organic! So over the past couple months I have been introduced to all this new stuff to eat and I am actually liking it! We are right next to Ozark Natural Foods, so we walk down there and get snacks, lunch drinks all the time! For those of you who don't know.. ONF is like a Whole Foods and I lived at Whole Foods when I lived in Tulsa..
Mandy, one of the doctors loves to cook and so she brings snacks up to the office all the time and thats how I have learned about all these new healthy snacks to make! She also has a blog that I have become obsessed with! Some of the stuff is a little out there for Mitch and I, but the majority of it we really like!
So the first thing I am going to share with y'all is the snack balls. She has all different kinds, but we chose to make the keylime, chocolate and we bought stuff to make the carrot cake ones, but haven't made them yet. There are so easy to make and we bought most of our ingredients from ONF, so its all organic, but you don't have to.


The Key Lime ones are my favorite!! You will need:
Food processor
1 cup cashews
1/2 cup raisins
pinch of salt
Juice of 1 lemon
Zest of one lime
Coconut flakes
Process cashews until ground. 


Add the raisins in and process again. Add remaining ingredients and process until it all sticks together...


Form into balls and roll them in coconut flakes.... Keep them in the fridge or freezer.



Those are the key lime, next we made the chocolate. I am not a chocolate fan, but I thought Mitch would like them...
1 1/2 cup walnuts
3/4 cup raisins
1 Tbsp honey
1 1/2 Tbsp cacao powder (just reg. cocoa powder works great)
coconut flakes


Process the walnuts in the food processor until finely chopped. Add raisins and process again...


Add remaining ingredients and process until it all sticks together. Rollin coconut flakes and keep then in the fridge!

The chocolate ones I wasn't a big fan of, and Mitch thought they were pretty good, but we both liked the key lime the best!! We had the carrot cakes ones at work yesterday, so I will prob wait awhile before I make them at home, but they are delicious too! I know they are a little strange, but they are so so easy and a great healthy snack and having 1-2 at a time will fill you up! So try them and let me know what you think. We will be making them a lot more around here :)
Here is the recipe for the carrot cake ones...
1/2 c walnuts
1/2 c almonds
4 dates, pitted
1/4 c raisins
1/4 c coconut flakes
1 large carrot
1 1/2 Tbsp coconut oil
Dash of cinnamon 
*Process nuts until finely shopped. Add raisins and dates and process again. Add remaining ingredients and process until everything sticks together. Roll into balls and roll in coconut flakes. Yum!
