This week has been pretty low key for us. Mitch had his first pharmacology test Thursday and did really well on it! He also has two more test coming up this Monday and Tuesday. So you can guess what he did all week, and what he will continue to do this weekend. I think I have finally gotten use to the amount of studying this program requires and I am learning of ways to keep myself busy. It really helps having Bella and that I feel like this is home now. Like this is my town. I been out doing stuff and enjoying it a lot more.
This week I have been to Target about 20 times ha. Yes I love Target and will sometimes just go to walk round and get out, but I have been trying to get a few little things here and there for our home. So thats kept me pretty busy. I also have been watching a lot of Parenthood- probably too much, but its just such a good show. With the weather not being freezing and not having snow/ice all over the ground, I have been able to continue my half training. The first 2 weeks went so well and then the winter weather came and it put us on a hold. So I feel a little behind but I am back at it and feel so much better about it all. We have been trying to decide whether we want to do the OKC half or the Nashville half and up until about a week and a half ago we were going to go home and do the OKC. Mitch wanted to do this because he thought it would be a perfect time to go home since its over his birthday, but then he realized he has a test and two group projects due that next week. So I told him the decision was up to him and he chose to do the Nashville. He said it takes a lot of stress off him because instead of driving over 8 hours, running the race on a Sunday and then driving 8 hours back when he has tests and projects he needs to be working on, we will only be 2 hours away in Nashville Friday night, race Saturday morning and then be home. Also, this way we can celebrate his birthday in Nashville and then I have some fun stuff planned for his actual birthday on Monday too! It works out a lot better for him and honestly the Nashville half is my dream half to run, so I am super excited!! Lets just hope the weather continues to get warmer and training goes well.

Also since Mitch has been studying, I have found a new book to read. I am not the biggest reader ever, but I do like to read. I am not that girl that is always reading a new book but do enjoy reading and try to read several books a year. I LOVE to read on vacation but at home I have a hard time finding time. So I am working on that because I think it is important. So last year I wanted a book to read while we were in Mexico and chose Divergent. I love books that turn into movies. Read it, loved it and wanted to go get the next one. So when I was sick when we got back from Mexico, Mitch bought me the next two books in the series (I love books in a series). Well the next day I was put in the hospital, then we moved to TN a few days after i got out and just never had the time to start the next one with all the stress of moving and trying to get settled.
So now I am starting it and can't wait- I am sure I will have a hard time finding time to read it, but in a few weeks we are going to Florida, so if I'm not done I know I'll read it there! And if I do happen to finish before we go, there is a third book!! So I will already have my vacation books ready to go. Can you tell I'm excited??!
I mentioned last post we are eating clean Monday through Friday and we had some really good meals agin this week...
The first was orange chicken and to be honest I was super worried about this meal, but it was probably one of my favorites! It turned out way better than we both thought!
The second favorite of the week was grilled salmon with avocado sauce. I mentioned I love salmon, and there are so many ways to make it, but my favorite is grilled. The avocado sauce is basically an easy guacamole- avocados, lime juice and onions- nothing fancy. I didn't know how well it would go on the salmon, but was up for trying something new. And let tell you it was delicious!! Sounds kinds weird I know, but oh so good!
All these recipes are on my Pinterest page under my board "healthy dinners" if you want to look them up. I highly recommend trying some of them!
Hope y'all enjoy the weekend and try and stay warm if you are in all the snow!
