Well, I guess saying I am done with snow made mother nature laugh. As I right this, we are currently getting dumped on. We have about .25 inch of ice and about 3.5 inches of snow with it still coming down hard. As much as I hate this crazy weather, it sure is pretty to wake up to, and who doesn't like to watch it snow?
I am very bitter towards Winter Storm Thor. We were suppose to go to Tulsa for the weekend and well we are still "playing it by ear", but the way it looks we definitely aren't going. Normally, I would say no big deal and we will reschedule, but we haven't been home since Christmas and because of everything we have going on, we can't go back until summer! Also, we have about 37,564,829 things we were suppose to get done this weekend. We have hair appts, meetings with our tax guy, and also since we knew we wouldn't be home until end of May/June, (my mom has always been big on birthdays), so she has planned a big party for both Mitch and I. She has family and grandparents coming in town for the party because we don't get to see them very often. And also, a lady that I work with had her baby yesterday and I was suppose to be up their Friday to see baby Hadley and her. So I feel like this isn't just a casual trip home to see family, but since we aren't going we have to cancel things galore and I'm sad we wont get to see all my family. I am super bummed but have come to terms that we will be snowed in our little house and try and enjoy it.
But on a different note, here is what we've bene up too this week...
These wonderful cookies went on sale this week here in Tennessee! They have been on sale back in OK for several weeks and I see all my former students that I usually buy from selling them, so I have been waiting and waiting for them to go on sale. Mitch and I went to grab sushi for lunch the other day and saw them at the grocery store and I think I jumped out of the car before he could get it stopped! I may have stocked up and I also may already need more ha! I LOVE Thin Mints and Savannah Smiles. Yuuummmm!
We also had more good meals this week and these were our two favorites. The first is lemon chicken with asparagus.
And the second was Thai chicken tacos. These were very similar to the lettuce wraps I made the other day, but even though they were "wrapped in lettuce" they weren't lettuce wraps and this was a completely different recipe. We liked both of them, but I think these chicken tacos were our favorite. Mitch LOVED the peanut sauce I made to go on them. Basically if I had peanut butter flavored anything to a meal, it becomes his favorite!
Another high note, I mentioned in my previous post, Mitch had three crazy hard tests back to back this week(that y'all he made ALL A's ON!) and I feel like I have not seen him for the past week and a half. So what does he do when he finishes his last test?? Brings me flowers!!! I mean y'all, yes its been a rough week for me, but he is the one with all the stress and tests, and I get flowers? It meant so much to me that he acknowledges how hard this program is for me too. I am so lucky that I have a husband who knows that and shows me that he knows this program is just as hard on me, in a different way, that it is on him. And I know that you guys who are in similar situations get it. They told us when he got accepted that this program will be more hard on the spouse than the actual student and that this is not your typical "grad school" and you will most likely have to "say goodbye" to your spouse for three years. So the fact that we have discovered this is true, and Mitch acknowledges it, means so much to me. Sorry about that rant- I just had to brag on my husband!
Since Mitch has been done with tests, it has been nice and we have been enjoying some nice relaxing down time! I have some exciting news to share, so check back soon!!
