Hello! I hope y'all are having a great week so far! Its half over :) I get Friday off since it is so slow around here in the summer. I love working here, but summers are crazy slow. I love to be busy and having to sit and read/play on the internet all day is starting to get to me.. ha! I enjoyed it at first becasue the end of the semester was so busy, it was nice to have things slow down, but now I am about to go crazy! I can't compain though.. I do like getting an extra day of the week off! Also, orientation for the incoming freshman starts this week, so things are slowly picking up.
I thought I would share a quick and easy recipe with y'all. I love when I find simple recipes. Don't get me wrong, I love to cook, and honestly nothing makes me more happy than being in the kitchen hours upon hours cooking, but there are those days that we have things to do in the evening or just need a quick meal. I have always felt like a quick, easy meal means not very good or not fresh. I have been proven wrong. I have found so many good quick meals and this specific one I found on Pinterest. I seem to be making meals from Pinterest a lot and I have enjoyed almost all of them.
Yesterday, I knew we didnt have much at home and we didnt want to make a big walmart trip since we are leaving tomorrow for Tulsa. So I browsed through my pinned recipes and came accross one that called for 4 ingredients and they were all things I had around the house already. It was brown sugar garlic chicken, which sounded delicious! It looked super easy, so I thought I would give it a try!
It called for chicken, garlic, brown sugar and oil- shocker, I know! I actually added chopped onions to mine. I was reading some comments about it and someone said they added onions and well I believe onions make everything a little better :)
All you do it chop up the onions and garlic..
On meduim heat, put about 3 tablespoons of oil in a pan and let it warm up. Add the onions and garlic and let them sautee for a few minutes. Depends on how cooked you like them, on long you leave them in the pan.
Once you get them to where you like them, remove from heat and add in 3-4 tablespoons of brown sugar. Stir and make sure all the brown sugar is melted. Place 3-4 (we only used 3) chicken breasts in a small casserole dish and pour the mixtire over it. Heat oven to 500 degreess and bake for 15-30 minutes (we did ours for the full 30 minutes). Remove from oven, let cool and enjoy a delicious, simple dinner! I of course forgot to take pictures of the finished product, but it looked and tasted wonderful! So if you need a quick easy meal that take about 10 minutes to prepare, but taste like it took a lot longer- give this one a try.
After dinner we took Bella on a walk and came back and did something we have been meaning to do for the past year!!! We ate our wedding cake ha! I was super excited and could not wait to cut into it.
Yes, I know we are a year overdue but it is never to late to enjoy some cake! The place we got our cake does things a litte different. If you go back in on your 1 year anniversay (or for us, your 2 year anniversay ha) they give you a topper that matches your cake from your wedding. I know it is a tradition to save the top, freeze it and eat it on your one year anniversary, but we thought this was really neat too!
I mean, most people say it taste just the same and so why not just get a new one! They don't make you do this, but it actually worked out better for us and who doesnt want fresh new cake to enjoy? By doing this we were actually able to take our topper with us when we left our reception and we ate it for dessert that night after our wedding and an early (4:30am) breakfast before we left for the airport! So we thought that was a pretty cool idea.
We have been putting it off and everytime we go to Tulsa we are either just too busy or forgot about picking it up. So this weekend since we were getting a cake from there anyways, we picked it up and ate it last night!
Mitch had been asking all evening when we were going to eat it. Ha! I think he would have rather just skipped dinner and went striaght for the cake. I do have to admit, it is pretty good cake and I didn't blame him.This cake is so rich and since they make it very tall and thick an extra small piece goes a long ways, so needless to say we are going to have cake for the next couple of weeks :)
